Healthful Honey Peanut Butter Raisin Cookies

1 cup Burleson's Honey Spread
1 cup chunky or creamy peanut butter
1 cup packed light brown sugar
1/3 cup canola oil
1/2 cup egg substitute or 2 large eggs
1 teaspoon vanilla
3 cups old-fashioned or quick oats
2 cups buttermilk biscuit and baking mix (tested with Pioneer brand)
1/2 teaspoon baking soda
1 cup raisins (optional)

In mixing bowl, beat together honey, peanut butter, brown sugar, oil, egg substitute and vanilla until light and fluffy. Combine oats, biscuit and baking mix and baking soda; add to honey mixture and mix well. Stir in raisins. Chill dough for at least 1 hour. Shape into 1-inch balls and place on baking sheet coated with cooking spray. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Cool for 5 minutes before removing from baking pan.

Makes about 5 dozen cookies.

Peanut butter is an excellent source of protein and is cholesterol-free.
Canola oil is an excellent source of monounsaturated fatty acids or "good" fat, which may help to lower blood cholesterol.
Oats are an excellent source of B-vitamins, iron and fiber.
