California Meatloaf

2 lbs. ground chuck or ground round beef
1/4 c. + 1 Tbs. Burleson's Dark Honey
1 c. onion, finely chopped
1/2 c. dry bread crumbs, softened in 1/2 c. milk
2 large eggs
1/3 c. pine nuts
1/2 c. sun-dried tomatoes
1 Tbs. fresh thyme
1-1/2 tsp. ground cumin
1-1/2 tsp. black pepper
Soak tomatoes in boiling water for 5 minutes, then drain and chop. Combine with all other ingredients and 1/4 c. of honey. Press into 9x5-inch loaf pan. Drizzle remaining Tbs. of honey over meatloaf and spread evenly on top. Bake uncovered in 400 degrees Fahrenheit oven for 50-60 minutes, or until meat thermometer inserted into center registers 155-160 degrees Fahrenheit. Allow to rest for 5 minutes before slicing. Makes 8 servings.
