Honey Roasted Applesauce

6 apples, peeled and cored (McIntosh or Granny Smith work well)
½ c. of Burleson's Pure Honey
2 Tbs. lemon juice
1 Tbs. lime juice
4 Tbs. unsalted butter
Pinch of salt
Preheat oven to 425º F. Cut apples into 1” chunks and toss with lemon and lime juices.
In a large sauté pan (be sure it's one that can be placed directly into the oven), melt butter over medium high heat. Add the apple and sauté until the edges begin to color, about 5 minutes. Don't stir the apples too much to encourage browning. Add the honey to the pan and mix well, then add the lime juice and a pinch of salt. Place the pan in the oven and bake until the apples are soft and lightly caramelized.
Carefully place the cooked apples into a food processor and process until it reaches the constancy you like. Serve hot or cold with roasted pork or chicken. Refrigerate what you don't serve immediately.
