Leek Gratin

2 tsp. butter
1 lb. fresh leeks, cleaned and sliced into circles
2 tsp. Burleson's Pure Honey
Salt and pepper to taste
1-1/2 c. grated Parmesan cheese
1 Tbs. Dijon mustard
3/4 c. cream
4 bread slices, cubed
Preheat oven to 375 degrees Fahrenheit. Heat butter in a skillet over medium-high heat. Add leeks and honey and cook for 8 minutes or until leeks are tender. Season with salt and pepper to taste. Mix cream, mustard and half of the grated cheese in a bowl. Stir together remaining cheese and bread cubes in another bowl. Transfer leeks to a 13 X 9-inch baking dish. Pour cream mixture into dish and stir to blend. Spread bread mixture on top. Bake, uncovered, for 40 minutes or until the top is golden. Allow to sit for 15 minutes before serving. Makes 4 servings.
