Orange Honey

1 c. Burleson's Pure Honey
Zest of one orange, cut into strips
Place honey in top of double boiler and bring water to a boil. Add orange zest and press them gently against the side of the pot as the honey warms. Using a candy or instant read thermometer, bring the honey mixture to 185 degrees and cook it at that temperature for 10 minutes. Remove from heat and allow to stand for 10 minutes. While still warm, strain into sterilized jar and cap tightly. Drizzle on breads, biscuits, pancakes, French toast, add to tea or serve over sautéed vegetables.
