Rosemary-Infused Honey

1 c. Burleson's Pure Honey
3/4 c. fresh rosemary leaves
Place honey in top of double boiler and bring water to a boil. Add rosemary leaves and press them gently against the side of the pot as the honey warms. Using a candy or instant read thermometer, bring the honey mixture to 185 degrees and cook it at that temperature for 10 minutes. Remove from heat and allow to stand for 10 minutes. While still warm, strain into sterilized jar and cap tightly. Can be drizzled over warm brie or used in marinades and sauces.
