Burleson's Honey - Taste

Honeydrop Cookies

The touch of orange rind brightens up these drop cookies.

3/4 c. butter
1 c. sugar
1 egg, separated
1 tsp. grated orange rind
1/4 c. Burleson's Pure Honey
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground mace
1/2 c. flaked coconut

Cream butter in a large mixing bowl and gradually add sugar, beating until light and fluffy. Add egg yolk and orange rind and beat well. Stir in honey. Combine flour, baking powder, salt and mace in a separate bowl. Gradually add flour mixture to creamed mixture and blend well. Drop dough by tsp. fulls, 2 inches apart onto ungreased cookie sheets. Flatten each cookie with a fork. Brush the tops lightly with beaten egg white, then sprinkle with coconut. Bake at 350 degrees Fahrenheit. for 10 - 14 minutes.
Remove to wire racks to cool. Store in airtight containers. Makes 5 dozen.
