Cheesy Apricot Dessert

Print this Recipe
2 tablespoons water or white wine
1 tablespoon Burleson's Pure Honey
ΒΌ cup dried apricots, chopped
1 cup (8 oz.) ricotta cheese

In a small saucepan, bring water and honey to a boil. Meanwhile, place apricots in a bowl; pour hot honey mixture over apricots. Cover; let stand 15 minutes. Chill for at least 30 minutes.

In a food processor or blender container, place cheese; pulse until smooth. Add chilled apricots; pulse 30 seconds more. Spoon into dessert dishes. Makes 2 to 3 servings.

Serving suggestion: You can also use this as a topping for fresh fruit pies.
