Christmas Oatmeal-Apricot Bars

½ cup butter (1 stick), softened to room temperature
½ cup light brown sugar
½ cup Burleson’s Pure Honey
2 large eggs
1 teaspoon vanilla
¼ teaspoon ground cinnamon
2 ½ cups biscuit and baking mix (Pioneer Brand recommended)
¾ cup old-fashioned oats
¼ teaspoon baking soda
1 cup chopped pecans (toasted)
½ cup dried apricots, chopped

Preheat oven to 350°F. In a medium bowl, whisk or stir together butter, brown sugar and honey. Add egg, vanilla and cinnamon; whisk to combine. Add baking mix, oats and baking soda; stir to combine. Add pecans and apricots; stir to combine. Spoon into a 13x9-inch baking pan that has been coated with cooking spray. Bake for 25 to 30 minutes or until just beginning to set in the middle. Let cool on wire rack. Makes 24 bars.
