1 c. Burleson's Pure Honey 2-inch stick of cinnamon, broken into several pieces 1/8 tsp. ground cloves 1 Tbs. brandy 3 sprigs (5" long) fresh cinnamon basil
Place all ingredients except basil in a saucepan and heat gently. Place basil sprigs in a 1 quart canning jar and cover with warmed honey mixture. Cover tightly and allow to rest for 1 week in a dark pantry, away from heat and cold. Remove the basil sprigs and use on pancakes, French toast, or wherever you might use maple syrup.
