3/4 cup mashed ripe bananas (about 2 to 3 bananas) 1/2 cup plain yogurt 1 egg, beaten 3 tablespoons Burleson's Pure Honey 2 tablespoons melted butter or canola oil 1 teaspoon vanilla extract 1 ½ cups self-rising flour ¼ teaspoon baking soda
Preheat oven to 350°F. In medium bowl, whisk together bananas, yogurt, egg, honey, butter and vanilla. In another bowl, whisk together flour and baking soda; add to banana mixture.
Gently fold together ingredients (do not over-stir). Spoon batter into 12-cup muffin tin that has been coated with cooking spray. Bake for 25 to 30 minutes or until toothpick inserted in the middle comes out clean. Makes 1 dozen muffins.
Serving suggestion: Serve with butter and Burleson's Pure Honey
