"Full Moon" Campfire Dessert

Print this Recipe
(created by Nina Swan-Kohler)

There's nothing quite like sitting around a campfire for making memories together. Make those times even more special by serving a warm, ooey-gooey dessert.

2 flour tortillas (7 to 8 inches in diameter)
1 tablespoon chunky peanut butter
1 tablespoon semi-sweet chocolate chips
1 tablespoon low-fat homemade granola (see recipe below)
6 miniature marshmallows
2 teaspoons Burleson's Clover Honey

Coat inside of an 8-inch skillet with nonstick cooking spray. Place skillet directly over heat. Spread peanut butter on one side of one tortilla; place in skillet (peanut butter side up). Sprinkle with chocolate chips, granola and marshmallows. Drizzle with Burleson's Honey. Place remaining tortilla over top. Cook, turning over as needed, until both sides are golden brown. Remove from skillet; cut into six wedges. Serve with additional Burleson's Honey, if desired. Makes 3 servings. (Repeat the recipe to serve more people.)

Homemade Granola

Granola is also great for snacking or for breakfast.

1-1/2 cups old fashioned oats or multi-grain oat cereal
1 cup chopped walnuts
1/4 cup wheat germ
1/2 cup Burleson's Clover Honey
2 tablespoons vegetable oil

In medium bowl, stir together oats, walnuts and wheat germ. In small bowl, stir together Burleson's Honey and oil; stir into oat mixture. Pour into a 13x9-inch baking pan coated with nonstick cooking spray. Bake in a 300-degree oven for 25 minutes or until golden brown, stirring after 12 minutes. Remove from oven; cool. Store in a tightly sealed container. Makes about 4 cups.
