Honey Bunnies

Everyone will hop out of bed on Easter morning for these tasty and adorable "bunnies."

4-1/2 cups buttermilk biscuit and baking mix
1 cup raisins
1 teaspoon ground cinnamon
1 cup (8 oz) low-fat vanilla yogurt or sour cream
2 eggs, slightly beaten
1/2 cup Burleson's Clover Honey
2 teaspoons vanilla
Honey Glaze (below)

Heat oven to 400 degrees. Combine baking mix, raisins and cinnamon in large bowl. In small bowl, combine yogurt, eggs, honey and vanilla; stir into dry ingredients to form a ball. Turn out onto surface dusted with baking mix; knead 8 to 10 times. Roll out to 1/2-inch thick; cut into bunny shapes using a cookie cutter dipped in baking mix. Place on baking sheet coated with non-stick spray; bake for 12 to 15 minutes or until golden brown. Brush with Honey Glaze. Serve warm or room temperature. serves 10 to 12.

Giant Honey Bunny:
Roll dough out to 1/2-inch thick; cut into 22 (2-1/2 inch) round buns. To make bunny head, place 14 buns on baking sheet coated with non-stick spray to form 10 to 12-inch round. Use 4 buns to form each ear. Bake for 14 to 17 minutes or until golden brown. Brush with Honey Glaze.

Honey Glaze:
Combine 1/4 cup Burleson's Pure Clover Honey and 2 tablespoons melted butter or margarine.

Special Tips:
--To keep dough from sticking to the cutter, spray cookie cutter with non-stick spray, then dust with baking mix before cutting out shapes.
--Double the glaze recipe and use it as a dipping sauce.
--After Easter, use other cookie cutters to make Honey Bears, Honey Dinosaurs, or other shapes to please your family.
