Honey-Curried Chicken Breasts

3 tablespoons butter
1 tablespoon curry powder
1½ lb. boneless chicken breast, cut into 1-inch cubes
½ cup Burleson’s Pure Honey
¼ prepared mustard (grainy mustard recommended)
3 cups prepared jasmine rice
1 tablespoon fresh snipped cilantro (optional)

In a large skillet, melt butter over medium heat.  Stir in curry powder.  Cook for 2 minutes.  Add chicken breast; cook and stir for 2 minutes.  In 1-cup glass measure, whisk together honey and mustard; pour over chicken.  Cook and stir for 3 minutes or until thick and bubbly.  Serve over jasmine rice; garnish with cilantro, if desired.  Makes 6 servings.
