1¼ cups shortening 1 teaspoon vanilla extract 1½ cups granulated sugar 3¾ cups all purpose flour 6 tablespoons Burleson's honey 1½ teaspoons baking powder 2 large eggs 2 teaspoons baking soda 2 teaspoons lemon extract ½ teaspoon salt
Preheat oven to 375°. Mix shortening, sugar, Burleson's honey, eggs, and extracts. Mix dry ingredients. Using a fork or wire whisk, stir dry ingredients into the moist mixture in small amounts until well-blended. Drop by teaspoonfuls onto a greased cookie sheet. Bake 10 to 12 minutes or until lightly browned. Remove to wire rack to cool. Store in a tightly covered cookie tin or container.
Makes approximately 4 to 5 dozen.
