4 lbs. fresh baking pumpkin 4 c. water 2 tbs. Burleson's Pure Honey 2 tbs. butter 1 tsp. salt ½ tsp. ground allspice
Quarter pumpkin and remove all seeds and strings. Place pumpkin and salt in water and heat to boiling. Cover and simmer 25 – 30 minutes until fork tender.
Drain well and cool slightly. Scoop the pumpkin flesh from the rind. Mash flesh and drain well in mesh strainer. Return it to the saucepan and heat over low heat for 3 minutes, shaking and stirring to remove excess liquid.
Stir in butter, honey and allspice. Serve with roast turkey.
