Looking for a bit more "passion" in your life? Make this tasty marinade for salmon. It uses passion fruit juice, now available in grocery stores with other prepared, refrigerated juices. It will add a bit of a tropical flavor to your meal. Serve this salmon with couscous or pasta, roasted asparagus and some chocolate-dipped strawberries for dessert.
2 to 4 boneless salmon fillets (5oz each) 1/4 cup passion fruit juice or orange juice 2 tablespoons Burleson's Clover Honey 1 tablespoon chopped fresh cilantro leaves 1 tablespoon canola oil 1 teaspoon peeled and minced fresh ginger (or prepared fresh ginger) 1/8 teaspoon salt
Place salmon fillets in 1-gallon-size resealable plastic bag; set aside. In 1-cup glass measure, whisk together remaining ingredients. Pour over salmon. Seal bag and refrigerate for 4 to 24 hours. When ready to cook, either broil or grill salmon for about 6 minutes per side.
Makes 2 to 4 servings.
