1 cup Burleson’s Pure Clover Honey
1 cup creamy or chunky peanut butter
2/3 cup shortening
2 large eggs
3-1/4 cups biscuit & baking mix
1 cup granulated sugar
Additional granulated sugar for rolling
In mixing bowl, beat together honey, peanut butter, shortening and eggs until smooth. Combine baking mix and sugar; add to peanut butter mixture and mix well. Chill dough for at least 1 hour. Roll into 1-inch balls and roll in sugar; place on cookie sheet sprayed with nonstick cooking spray. Flatten with a decorative cookie press dipped in sugar (or a fork). Bake in a 350º oven for 9 to 10 minutes or until golden brown. Cool on sheet for 5 minutes; remove to rack to cool.
Makes about 5 dozen cookies.
Tip: Leftover cookie dough can be stored in the refrigerator for up to 1 month.
