Better than take-out
4 4-oz. boneless, skinless chicken breasts 1/2 c. Burleson's Pure Honey 1/2 c. buttermilk baking mix (Bisquick recommended) 2 tsp. ground ginger 1 tsp. seasoned salt 1/4 tsp. pepper 2 Tbs. vegetable oil
Coat chicken with honey and set aside. In a pie plate, combine baking mix, ginger, seasoned salt and pepper and mix well. Roll honey-coated chicken in dry mixture. Add oil to a non-stick skillet and bring to medium-high heat; brown the coated chicken on both sides. Remove chicken and drain excess oil; place chicken on rack in a baking pan. Bake at 350 degrees Fahrenheit for 20-30 minutes or until juices run clear. Makes 4 servings.
