2/3 cup packed light brown sugar 2/3 cup butter or margarine, softened 1/2 cup Burleson's Pure Clover Honey 1 large egg 1 teaspoon vanilla 2 cups quick or old-fashioned oats 1-1/2 cups Pioneer Biscuit & Baking Mix 3/4 teaspoon ground cinnamon 3/4 cup chopped pecans, toasted Decorator icing, as desired
In large mixer bowl, combine brown sugar, butter, honey, egg, and vanilla; beat until light and fluffy. In separate bowl, stir together oats, baking mix, and cinnamon. Add to brown sugar mixture, blending well. Stir in pecans. Line 1 12 X 2 inch, or 2 8 inch, heart-shaped baking pan(s) with aluminum foil, wrapping foil over sides of pan. Coat with non-stick cooking spray. Spoon cookie dough into pan, pressing to flatten. Bake at 350 degrees for 15 to 18 minutes. Cool completely in pan or on wire rack. Use foil to lift cookie out of pan. Remove foil; place cookie on serving platter. Decorate as desired with "sweet nothings" using decorator icing.
Makes 1 giant or 2 medium cookies.
