Burleson's Honey - Healthy

Honey-Glazed Apples and Cranberries with Honey-Yogurt Cream

Print this Recipe
1 cup frozen (thawed) apple juice, undiluted
1/2 cup Burleson's Pure Clover Honey
1 cinnamon stick
3 Golden Delicious apples, peeled, cored and thinly sliced
1/3 cup sweetened dried cranberries (Craisins recommended)
1 tablespoon cornstarch
1/4 cup orange juice

Honey-Yogurt Cream:
1 cup plain yogurt
2 tablespoons Burleson's Pure Clover Honey

In medium nonstick skillet, heat apple juice, honey and cinnamon stick over medium heat to boiling. Stir in apple slices and cranberries. Cook 5 to 7 minutes or until apples are crisp-tender. Meanwhile, in small bowl, stir together cornstarch and orange juice. Stir into apple mixture. Cook, stirring constantly, until mixture boils and thickens, about 2 minutes. Remove cinnamon stick. Cool slightly. Meanwhile, in small bowl, whisk together yogurt and honey. When ready to serve, spoon apples and cranberry in serving dishes and top with Honey-Yogurt Cream.

Makes 4 to 6 servings.
