Liver with Honey Gravy

Ingredients:

4 6-oz. slices calf's liver
Flour for dusting
2 Tbs. butter
2 Tbs. vegetable oil
2 Tbs. red wine vinegar
3 Tbs. chicken broth or bouillon
2 Tbs. Burleson's Pure Honey
Salt and pepper to taste

Directions:
Wash and dry liver slices, season both sides with salt and pepper and dust with flour. Melt half the butter and the oil in a heavy skillet over a high heat. Add liver sliced to hot pan and cook until brown on one side, about 1-2 minutes, then turn to cook for 1 minute on other side. Remove to a platter and keep warm. Stir vinegar, broth and honey into the skillet and boil for 1 minute, scraping the pan juices into the mixture. Add the remaining Tbs. of butter and stir until smooth. Serve gravy over liver slices. Makes 4 servings.
